Fettuccine alfredo, mushroom ravioli, spaghetti with meat sauce, and chicken parmesan. I still love Italian food, and I’ve made a few recreations over the years: chicken marsala, lasagna and creamy chicken pasta. One night I was struck with the idea to make chicken parmesan meatballs, and I knew I needed to try to make them asap! I made a chicken parmesan casserole before which I loved, but I wanted to make a simple almost appetizer version of the classic dish. These chicken parmesan meatballs turned out fantastic. Lightly “breaded” to give you the taste of classic chicken parmesan but with no guilt! I love dipping these chicken parmesan meatballs into a simple marinara sauce to complete the recreation of the traditional dish!

So do you ever have one of those days where things just don’t go as planned. Last week I got off work early and I was so excited to go grocery shopping. I’m probably one of the few twenty-somethings that love grocery shopping. The grocery store is my happy place because it is where I get the ingredients to make delicious meals. I get all the way to the check out line when I realize I left my wallet in my yoga bag. I live 20 minutes from my grocery store so I had to drive home, drive back and then drive back home, which added more than an hour to my trip. There was one silver-lining. The grocery store put all my food in their freezer so I wouldn’t have to go back through the store and pick everything out again! Pretty sure I will be triple checking to make sure I have my wallet before leaving the house again.

Grain-free Chicken Parmesan Meatballs with Simple Marinara Dipping Sauce | Plaid and Paleo

Chicken Parmesan Meatballs

Makes 15 meatballs

Ingredients

    Meatballs:
  • 1 lb ground chicken
  • 1 tbls italian seasoning
  • 1 tbls coconut flour
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • Breading:
  • 1/2 cup almond flour
  • 1 tbls italian seasoning
  • Marinara sauce:
  • 8 oz can tomato sauce
  • 1/4 cup tomato paste
  • 1/4 cup water
  • 1 tbls Italian seasoning
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper

Directions

    Meatballs:
  1. Heat oven to 400 degrees.
  2. Mix all meatball ingredients together until well combined.
  3. In a shallow dish, combine breading ingredients.
  4. Form meatballs into bite-sized balls, about 1 tablespoon.
  5. Roll in breading until covered.
  6. Place onto lined baking sheet.
  7. Pop in the oven and cook for 15 minutes. Flip and cook for another 8 minutes.
  8. Turn broiler to high and cook for another 2 minutes, or until meatballs are lightly browned.
  9. Marinara sauce:
  10. Combine all ingredients in a sauce pot. Cover and simmer on low for 5 minutes.

Notes

If you don’t have Italian seasoning, you can use 1 tsp dried oregano, 1 tsp thyme and 1 tsp basil.
